Keto Stuffed Cabbage in the Instant Pot
 
 
By using the Instant Pot and the microwave for quickly steaming the cabbage pliable, you are able to make this delicious keto stuffed cabbage in less than an hour from start to finish!

Ingredients
  • Cabbage leaves, softened (see instructions below)
  • !**Filling ingredients**:
  • 2 lbs ground pork (or beef)
  • 1½ cups riced cauliflower
  • ¼ cup chopped fresh parsley
  • 1 tablespoon dried onion flakes
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • **Sauce ingredients:**
  • 1 (28 ounce) can crushed all purpose tomatoes
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
Directions
  1. **To Soften the Cabbage Leaves:**
  2. Cut the core out of a large head of cabbage.
  3. Remove any discolored or damaged leaves from the outside.
  4. Place in a large bowl, stem side down with 1 cup of water in the bottom.
  5. Microwave, covered, on high for 8 minutes, or until the outer leaves are softened and turning translucent.
  6. Remove and cool before carefully separating leaves for use.
  7. **Make the filling:**
  8. Place all of the filling ingredients in a large bowl, and mix well with your hands until fully combined.
  9. **Make the sauce:**
  10. Combine all of the sauce ingredients in a large bowl and stir well.
  11. Set aside until ready to use. If there is any sauce leftover you can store extra sauce in the fridge or freezer.
  12. **make the cabbage rolls**
  13. Place a cabbage leaf on a clean flat surface and add ½ cup meat filling to the center.
  14. continue until you have used up all the filling and/or cabbage leaves
  15. **Instant Pot Instructions:**
  16. Place 1 cup of sauce on bottom of Instant Pot insert.
  17. Place the rolls in the Instant pot. Layered (with sauce between layers to avoid sticking the cabbage rolls together)
  18. Continue until you have used up the rolls or you reach the max line in the Instant pot.
  19. Top the last layer with 11/2 cups of sauce. If there any rolls left bake them in the oven as per the baking instructions below.
  20. Cover the top of the cabbage rolls with another 1½ cups of sauce.
  21. Place the cover onto the Instant Pot and lock in place.
  22. Make sure the vent is closed.
  23. Choose Manual / Low Pressure and set it for 20 minutes.
  24. When the timer goes off, allow the pressure to release naturally – about 15 minutes.
  25. Remove the lid and serve hot
  26. **Baking Instructions:**
  27. Preheat oven to 350 degrees.
  28. Spread 1 cup of sauce in the bottom of a 9 x 13 baking dish.
  29. Place the rolls in the baking dish.
  30. Top with another 2 cups of sauce, distributing evenly over the cabbage rolls.
  31. Bake for 45 - 60 minutes until cooked through.
Notes
If you don’t have an Instant Pot or slow cooker, Bake in the Oven
**Baking Instructions:**
Preheat oven to 350 degrees. Spread 1 cup of sauce in the bottom of a 9 x 13 baking dish. Add the cabbage rolls Top with another 2 cups of sauce, distributing evenly over the cabbage rolls. Bake for 45 minutes, or until cooked through.
Store leftovers in an airtight container in the refrigerator for up to 5 days, or the freezer for up to 3 months.
Another way to soften the Cabbage leaves
Rather than boiling the cabbage leaves, put a foil-wrapped cabbage head in the freezer for a day or two. Remove the foil and the leaves will be soft so they can be used immediately.
