Ingredients
  • ½ cup unsweetened applesauce
  • 2 small or medium bananas mashed
  • 1 ½ cup Splenda or other sugar substitute
  • 2 tsp. vanilla extract
  • ½ cup cocoa powder
  • 1 ½ tsp. baking soda
  • ½ tsp salt
  • 2 cups finely shredded zucchini
  • 1 ¾ cups all purpose flour
  • ½ cup walnut pieces
Directions
  1. Prehe. Grease and flour an 9×13-inch baking pan.
  2. In a large bowl, mix together the applesauce, mashed bananas and sugar substitute. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.
Notes
These brownies get moister and denser the day after if they last that long.

Ingredients
  • ¼ c butter
  • ¼ c sugar
  • 1 egg
  • 2 very ripe bananas
  • ¼ c teff flour (teff is a very tiny seed like grain that is supposed to be gluten free)
  • ¼ cup almond flour
  • ¼ c coconut flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. vanilla
  • ½ cup Raisins
  • ½ cup Walnuts (plus 12 walnut halves for garnish)
Directions
  1. Preheat oven to 375 F
  2. Cream butter and sugar, add in bananas and beat well, add in 1 egg and beat more. Add vanilla.
  3. Combine dry ingredients, then add dry to wet combo. Fold in Raisins & walnuts
  4. Beat until combined. The mixture will seem dry but the texture is moist once baked.
  5. Add chopped walnuts and raisins if desired (about ½ c each)
  6. Oil twelve muffin paper and put in muffin pan Place a walnut on top.
  7. Bake about 15 to 16 minutes or until a toothpick comes out clean.
Notes
As these ingredients are not common a quick search for these ingredients showed that I could find them at the Bulk Barn here in Calgary, Alberta . Where it will be possible to obtain a smaller amount. Also can be found at Community Natural Foods Store here in Calgary, Alberta.

The TWO Ingredient Cookie

TWO Ingredient Cookie
Yes. For real. Two ingredients. (Yes, you can add other things if you want… but you don’t HAVE to!) Why this recipe is awesome? I’m terrible at eating regular oatmeal. But I’m EXCELLENT at eating cookies!
Serves: 16 cookies
Ingredients
  • 2 large old bananas
  • 1 cup of oats (quick or regular! If you use regular, we’d suggest chopping them a little so everything holds together better)
Directions
  1. Preheat oven to 350 degrees F
  2. Mix those two together.
  3. Then add in what sounds yummy to you! (Or nothing!) -a handful of chocolate chips-crushed walnut pieces-cinnamon-raisins
  4. We bake for 15 minutes on a GREASED cookie sheet.
Notes
Since all bananas are different sizes, the needed measurements can vary. If it seems too runny and the cookies would flatten out too much, add more oatmeal. And make sure to not add in TOO many mix-ins as the cookies won’t hold together very well. The ones in these photos have a handful of chocolate chips, a teaspoon or two or cinnamon, and ¼ish a cup of crushed walnuts. Old bananas are amazing for this, but you can use fresh ones too. I buy a bunch of bananas, let them get old on my counter, and then stick ‘EM all in the freezer.

This Paleo type pancakes recipe does not require ANY flour. No almond flour, no coconut flour. In fact, it only requires TWO ingredients.! And Oh so Tasty.

  • 1 banana
  • 2 eggs
Directions
  1. Peel the banana and cut it in to pieces and throw it in a Mixing Bowl . Go ahead and crack those two eggs in there too.
  2. Mix it all about! You can use a mixer or hand blender.
  3. Oil up your Skillet/Pan (I used Coconut Oil ) and then pour the Paleo pancakes mix in to the pan. Cook like you would with normal pancakes.
Notes
Drizzled some Honey on them. But really, the banana pancakes are already sweet, so that is totally optional. The important thing here though, is to realize it is obviously not going to taste exactly like pancakes you make from flour. However, for a pancake that doesn't have any flour, it is quite an awesome recipe find!

Ingredients
  • 1½ cups Sugar
  • 3 Eggs
  • ¾ Cup Oil
  • 2 Cups Flour
  • 2 tsps. Baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 2 cups mashed bananas (about 6)
  • 1 cup raisins
Directions
  1. Set oven at 350° F. Grease and flour a Bundt pan or two 8” x 4” x 3” loaf pans. Beat sugar and eggs until creamy. Mix in oil. Sift Flour, Baking soda, salt, cinnamon, and allspice. Add to creamed mixture. Mix in Bananas and raisins. Pour into Bundt Pan and bake for 1 Hour or until done. (Test with a toothpick, it should come out dry.) Turn out of pan when cool.
Notes
Use 2 fairly big bowls one to mix flour in and later mash bananas in. Don’t need to sift mixing in bowl works. Use electric mixer to mash bananas. Mix up eggs and sugar then oil. Pour mixed flour and spices into bowl with eggs mix together. Mash up banana’s in flour bowl and then add to eggs and flour mixture. Pans spray with Pam and shake blending flour shake to cover shake out excess.
